Serves: 15-16 pancakes
After trying a couple of different recipes, this is the version I like, of course with my tweaks.. I hope you enjoy them as much as I do! π
Ingredients:
2 cups flour (maida or atta)
ΒΌ cup sugar
1 teaspoon baking soda
2 cups milk
1 teaspoon Vanilla
2 egg yolks lightly beaten
ΒΌ cup melted butter
ΒΌ teaspoon salt (no salt if you use salted butter)
Β½ cup plain yogurt (dahi)
2 egg whites beaten until soft peaks form
How to make:
1) Mix all the dry ingredients.
2) Add milk, butter, egg yolk and vanila . Add these things slowly and Mix well, there should be no lumps.
3) Add yogurt and mix, please donβt beat.
4) Add beaten egg whites and mix again. The result should be a nice smooth batter.
5) Use a non stick pan, drizzle just a few drops of olive oil for the first pancake (you donβt need to add more oil for rest of the pancakes if the gas is not being switched off in between). Take a Ladle or small bowl to pour the batter for one pancake on pan, once it starts to bubble (about 1 minute), flip and cook the other side for another 1 min.
- Fluffiness is the result of using both curd and eggs in this recipe.
- For best results use a non stick pan and cook on low flame.
- Use the same ladle / bowl to get same size pancakes.

Toppings:
1) Whipped cream (blend Malai or heavy cream and some sugar in mixer until it becomes firm and holds shape. The trick is to use chilled Malai/heavy cream and chilled mixer jar – put it in freezer for 5-10 mins before you use it to churn the cream). Store the cream in freezer if not being served immediately.
2) Use honey and roasted almonds for topping.
Cream, honey and roasted almonds will give you the most basic and amazing combination.
3) Fruits – To make it a well balanced breakfast, add fruits. It tastes best with banana or berries. You could also use seasonal mangoes.
4) Chocolate or coffee sauce (see next recipe). This is an entirely optional addition.
